Eggless Ube Cake

Eggless Ube Cake

Ingredients:

  • 2 cups All purpose flour
  • 4 tspn Baking Powder
  • 1 1/2 tspn salt
  • 2 1/4 cup brown sugar
  • 500 ml fresh milk or 250 ml evap plus 250 ml water as substitute
  • 1 tbspn vinegar
  • 1 cup canola oil or corn oil
  • 2 to 3 tbspn bakersfield ube flavorade or 1 to 1 ½ tspn neco ube food color plus 2 tspn vanilla as substitute

Instructions:

Line  with parchment paper 2 8*3 inches round pan or 1 13*15 sheet pan set aside

Combine milk and vinegar let it stand for 10 to 15 to curdle set aside

Mix dry and set aside (flour,salt baking)

Then in a bowl ibuhos ang milk,oil, food flavoring,sift in and dry ingredients combine until smooth and silky no lumps,but donot over mix

Tap twice to release bubbles

Bake on preheated oven
160c 35 to 45 minutes

Let it cool before frosting
For the frosting
I used whipped cream
