Need a quick and easy dessert that's sure to impress? Try this no-bake lemon cheesecake with just a few ingredients. It's absolutely moreish! Perfect to serve at family dinner's, BBQ'S or special occasions.

Ingredients πŸ›’

Biscuit Crust:

270g/9.5oz Cadbury Chocolate Chip Cookies, crushed
75g/2.64oz Butter, melted

Cheesecake:

1 Tin (397g/14oz) Sweetened Condensed Milk
400g/14oz Philadelphia Cream Cheese
150g/5.3oz White Chocolate, melted
Zest and juice of 2 small lemons

Method:

Biscuit Crust -

Line the base and sides of a 23cm/9-inch springform pan with baking paper.
Mix the melted butter with crushed biscuits and press down on the base of the pan. Refrigerate 30 minutes.

Cheesecake -

Melt the white chocolate and leave to cool slightly (sometimes the white chocolate doesn't melt properly leaving small tiny pieces. If you stir it with a hand balloon whisk you will remove them completely and it will become nice and smooth).
Pour the condensed milk into a large bowl. Add the cream cheese and lemon juice and whisk until smooth. Add the zest, then fold in the white chocolate until well combined.
Pour the filling over the set biscuits and smooth over the top. Place in the fridge and chill until set.
Decorate as desired with slices of lemon, mint, zest or even with white chocolate curls.
